    Hello friends, Did you read my blog post on Tired of telling people that you are Diabetic? ID Yourself? You surely must have, if not, go read it. Today, I will teach you a recipe that is extremely delicious and especially designed for Diabetics- presenting the “Burnt Corn Salad”. This recipe is low in calories and fat, and high in fibre. One of the perfect choice for those who have high blood sugar levels post lunch. So here comes my recipe.

    Smoked Corn Salad

    Preparation Time: 10 mins
    Cooking Time: 10 mins
    Makes 4 servings


    • 1 sweet corn
    • 1 white onion, sliced
    • 1 capsicum, sliced
    • 1 tomato, sliced
    • salt to taste

    Dressing Ingredients:

    • 1 tsp olive oil
    • 2 tsp lemon juice
    • 2 pinches chilli powder


    • Roast the corn cob until the corn is slightly burnt, over an open flame
    • Remove the corn kernels from the cob and Keep aside
    • Mix corn kernels, onion, capsicum, tomato and salt together
    • Sprinkle some olive oil, lemon juice and chilli powder
    • Serve immediately
